Mediterranean Tortellini-Salad

When your mom comes for a visit after a for hour drive to your new apartment you should better have something engerizing and super tasty which doesn’t take you too long because you maybe also have to clean up your whole mess (especially after New Years Eve) as well ;-))) So this is one of my favourite easy-to-make and delicious recipes for a yummie lunch:

All you need(for two persons) is:

  • 250 gramm Ricotta&Spinaci Tortellini
  • 1 pkg Morzarella-Cheese
  • 1 Zucchini
  • 1 Aubergine
  • 1 Tomato
  • 2 handful Ruccola
  • Olives
  • Olive Oil, creamy Balsamico,, green Pesto, Basilikum, Sea Salt

Bowl some water and cook the tortellini for max. 10 minutes. Meanwhile cut the Zucchini and the Aubergine and fry them in a preheated pan. Let both the veggies and the noodles cool while cutting the tomatoes in small cubes. Mix all together, Mix with Balsamico, Olive Oil, some Salt and Pepper and 3 big scoops of green pesto. Top with cutted Morzarella, Ruccola and Olives and sprinkle some Basilikum and Olive Oil on it. Takes you max.20 mins, is filling, super healthy and extremely tasty :-) Enjoy!! <3
