Pumpkin Pie With Vanilla Frosting

So for autumn I love trying new recipes with pumpkin and as I wanted something sweet and filling the other day I decided to make this delicious pumpkin cake with vanilla frosting. It is really fast to make and not just something for your sweet tooth but also nice for breakfast :-)


All you need (for the cake) is:

  • 1 1/2 cup oat flour
  • 1/2 cup almond flour
  • 1 cup pumpkin purée
  • 1 can chickpeas
  • 1 tbsp coconut oil
  • 1 tbsp honey
  • 1/3 cup agave
  • 1/3 cup organic sugar
  • vanilla powder
  • baking powder

All you need (for the frosting) is:

  • 600 gr greek yoghurt
  • 6 tbsp vanilla powder
  • 2 tbsp honey
  • Optional: topping with a handful of walnuts and chocolate chunks

First preheat the oven to 170C. Meanwhile start blending chickpeas until smooth, then add all other cake ingredients and fill evenly in a prepared pen. Bake for around 25 mins. Don’t over bake, they should come out moist. Let it cool while making the frosting: Simply mix all frosting ingredients and top the cake with it. Sprinkle it with nuts and chocolate chunks and enjoy ;-)
